How to work out the number of coffee servers and hostesses for your guest count, and what a coffee, dates and bakhoor corner needs at weddings and gatherings.

The working rule

One coffee server per 50 to 70 guests is enough at most events so nobody waits. At long events, or when guests arrive all at once, add servers for the reception hour.

The ladies' section

Assign female servers and hostesses to the ladies' section, counted separately on its own guest numbers, so privacy stays complete.

What a server needs

Enough dallahs to keep coffee hot, clean cups in the right number, dates or sweets, and a refill point close by so servers do not cross the hall. Matching uniforms look orderly in photos.

Elders first, serve with the right hand, pour a little at a time. Emirati guests notice these details immediately, so choose a crew trained in them.

Bakhoor and perfume

A perfume and incense table at the entrance completes the welcome, with a hostess to perfume guests and burners placed safely away from drapes.
